The European Union funded campaign Flavor Your Life, which is dedicated to providing the latest in olive oil news, sheds light on the olive oil classification process as well as organoleptic characteristics to look for when shopping for olive oil

 BOHEMIA, NY / www.myprgenie.com / ACCESSWIRE / April 10, 2014 / Flavor Your Life, a European Union funded campaign that is dedicated to providing the latest in olive oil news, shares information about the olive oil classification process, organoleptic characteristics of quality oils, and the nutritional value of olive oil.

Olive oil is a key ingredient in the Mediterranean diet.  ‘Olive oil’ is in fact a general term to describe liquid products derived from the olive. However, further classification is needed when examining quality.  The European Community has promoted the strict standards of the classification of olive oil in an effort to safeguard its high economic value, prevent mixing with oils of lower commercial value, and protect the consumer from fraud. The two key standards for oil chemical analysis are acidity and peroxides. Acidity determines the sale category of the oil.  Peroxides indicate the level of oil preservation and rancidity. If the number of peroxides present in any given oil is low, it means that specific oil is of high quality. Organoleptic characteristics of quality oils will dictate whether the oils will come off as bitter, harmonious, sweet, fresh, fruity, intensely fruity, mature, soft, spicy, full, or lively.

Olive oil is fat derived from the pressed olive fruit. It is full of fragrance and flavor, and has a great combination of nutritional properties, including a perfect balance of monounsaturated fatty acids and polyunsaturated fats, vitamin E, vitamin A, and other antioxidants.
