Recipe from Angie Cox of Mo.
Ingredients:
- 4-5 fresh sweet potatoes
- 1 cup brown sugar
- 1 1/2 Tbsp corn starch
- 1 cup apricot nectar
- 2 tsp grated orange peel
- 1/2 cup hot water
- 1/8 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup dried apricots, chopped
- 2 Tbsp butter
- 1/2 cup pecans
- marshmallows
Directions:
- Clean, slice into chunks and slightly pre-boil sweet potatoes.
- Bring the rest of the ingredients (excluding butter, pecans and marshmallows) to a full boil, stirring constantly. Remove from heat when thick.
- Add 2 Tbsp butter and 1/2 cup pecans. Pour over potatoes.
- Bake for 35 minutes at 350 oven.
- Top with marshmallows.
