Dredging and Pan Searing Fish For a Crisp Texture
In a shallow bowl big enough to lay the fish flat, mix flour and dry herb mixture together, season with a little salt and pepper. Dip the fish in the egg to moisten.
(You can substitute egg with water or milk.) Dredge the fish pieces in the corn or rice flour coating. Set aside on a plate. In your skillet or saute pan, preheat oil for about 1 minute. Place fish in oil, let it crisp on both sides -- about 2-4 minutes each side.
If you are cooking sole or a similar thin fish or fillet, it will cook through on the stovetop (about 4 minutes each side.) If you are cooking hearty, thick fish, place the pan (with the fish still in it) in the preheated 375 degree oven and cook until done (about 10-15 minutes.)
Chunky Shrimp And Feta Salad
Cut all vegetables into large (1/2 inch to 3/4 inch) chunks. Mix with feta and shrimp. Use your favorite dressing. Makes 4 servings.
